Fourme d’Ambert is one of France’s oldest cheeses dating back to the Roman period.
It’s flavour is more supple and dense than most blues and is easily recognisable by its unusually tall cylindrical shape. This cow’s milk cheese is creamy, savoury and mild with light nut and mushroom overtones. The period of maturing is three to four weeks in humid cellars.
